  • 2 cups canned chickpeas (garbanzo beans)
  • 1 cup vegetarian mayonnaise (can use Vegenaise)
  • 2 Tablespoons mustard
  • 3 Tablespoons sweet relish
  • 2 green onions, chopped (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper


  1. Put chickpeas in a ziplock bag, use a rolling pin to mash chickpeas.
  2. Pour mashed chickpeas into a bowl. Add remaining ingredients, and mix together for 1 minute.
  3. Serve as a sandwich or with corn chips or raw vegetables.
This is a very simple and delicious American egg salad recipe - without egg! Enjoy it on bread with lettuce and tomato for a healthy, tasty lunch.

Chickpeas (also called garbanzo beans) provide fiber, protein and such minerals as potassium, magnesium and zinc.
