Eggplant Clay Pot

I.     Recipe name: Eggplant Clay Pot

II.     Ingredients:  

  1. 3 eggplants

  2. ½ green bell pepper and ½ red bell pepper

  3. 1 package Enoki mushroom*

  4. 1 cup vegetarian beef burger** (optional)

III.     Seasonings:

  1. ¼ teaspoon salt

  2. 1 teaspoon sugar

  3. 1 Tablespoon vegetarian barbeque sauce*

  4. Some sesame oil

IV.     Sauce:

Mix 1 teaspoon cornstarch or chestnut powder* with 1 Tablespoon water

V.     Directions:

  1. Cut eggplants into 3-inches cubes. Dice bell peppers. Trim the root of the Enoki mushrooms to separate them.

  2. Preheat 2 Tablespoons cooking oil in a frying pan. Fry the eggplants on high heat until color changes. Add barbeque sauce and vegetarian beef burger. Stir-fry until well mixed. Add the seasonings, bell peppers, and Enoki mushrooms. Remove from heat and transfer to a clay pot.

  3. Place the clay pot on the stove and simmer for 30 seconds. Pour some sesame oil and serve.
