Clay-Pot Potatoes and Mushrooms

I.     Recipe name: Clay-Pot Potatoes and Mushrooms

II.     Ingredients:

  1. 1 package monkey head mushrooms**

  2. 6 ears shiitake mushroom*

  3. 2 potatoes

  4. 10 slices carrot

  5. 1 slice ginger

III.      Seasonings:

  1. ¼ teaspoon salt

  2. 1 teaspoon sugar

  3. 1 Tablespoon vegetarian oyster sauce*

  4. 1 Tablespoon dark soy sauce*

IV.     Starch solution:

        1 teaspoon cornstarch or chestnut powder*, 1 Tablespoon water

V.     Directions:

  1. Soak shiitake mushrooms in water until soft. Cut potatoes into small cubes.

  2. Preheat 1 Tablespoon cooking oil in a frying pan. Fry ginger on high heat until fragrant. Add the potatoes and continue to stir for 1 minute. Add monkey head mushrooms and shitake mushrooms. Stir until well mixed.

  3. Add some water, the seasonings, and sliced carrots. Simmer for 5 to 10 minutes. Add the starch solution at the end.

  4. Transfer to a clay pot.

  5. Place the clay pot on the stove, cook until boiling. Remove from heat and serve.
