Happiness Cup

 

I.   Recipe name: Happiness Cup

II.   Ingredients:

  1. 6 asparagus

  2. 1 red bell pepper

  3. 1 yellow bell pepper

  4. 1 green bell pepper

  5. 1 case Hon-shimeji mushroom*

  6. 3 thick slices vegetarian ham**

III.   Sauce ingredients:

  1. ½ teaspoon salt

  2. 2 Tablespoons vegetable oil

  3. 1 teaspoon brown sugar

  4. 2 teaspoons soy sauce

  5. 1 teaspoon sesame oil

  6. ½ teaspoon black pepper

  7. 1 teaspoon cornstarch

  8. ½  cup water

IV.   Directions:

  1. Cut off the top stem of the bell peppers. Remove core and seeds. Rinse out the bell peppers

  2. Peel off the old tough skin or cut off the tough bottom portion from asparagus. Cut into 2 sections. Cook the asparagus in hot water.

  3. Trim off the bottom end of the Hon-shimeji mushrooms. Wash the mushrooms.

  4. Cut the vegetarian ham into thick strips.

  5. Stir-fry the mushrooms and the vegetarian ham until fully cooked. Place the ingredients vertically into the bell pepper cups. Finally, insert the asparagus into the bell pepper cups.

  6. Mix all the sauce ingredients together and bring it to a boil. Sprinkle the sauce over the bell peppers.
