Vegetarian Chili Soup

1 cup vegetarian ground beef (usually can get in the frozen section of the grocery store)
2 medium sized potatoes, peeled and cubed
1 carrot, peeled and cubed
1 tomato, cubed
1 red pepper, cubed
1 can of red beans (or red bean in chili sauce, 15 oz)
1 teaspoon sugar
1 teaspoon salt
3 cups water
½ medium onion, cubed
¼ cup olive oil
3 Tablespoons Chili powder (medium or hot)
Heat olive oil in a pot; add onion and chili powder, and mix well.
Add the vegetarian ground beef; stir for 1 minute.
Add the remaining ingredients.
Cook until the vegetables are soft and the mixture thickens.
Sprinkle with salt if needed.
Serve warm with crackers. This is an excellent, hearty dish for the cold days of winter.
